With the abundance of fruit and vegetables available to us on the island, we have designed our menu primarily around what we get here year round. All of our spreads, sauces, jams and granola are made in-house from scratch.
Our bread is baked fresh using sesame, flaxseed, oats and molasses.
The coffee beans we use in our espresso machine are grown on the side of the Maderas Volcano in the town of Las Cuchillas, and traditionally roasted one pound at a time in a clay pot over an open fire.
Our meal and cake offerings are loaded with locally sourced ingredients including the honey from cloud forest bees on Maderas, cacao, sesame, peanuts, herbs, organic lettuce greens, and almost all the fruits and vegetables we use.
You can expect to find a delicious selection of baked goods on display including Carrot Cake with Cream Cheese Icing, Molasses Spice Cookies, Island Cacao Brownies, Cranberry Orange Scones, Ginger Cake with Passionfruit Icing and Banana Bread.
You've got your hammock from the Masaya market, your pottery from San Juan del Oriente, your leather shoes from Esteli, but do you have your Organic coffee and honey from Ometepe yet?
